Senate Resolution No. 2063 BY: Senator RITCHIE COMMEMORATING the 50th Anniversary of the Koffee Kove WHEREAS, It is incumbent upon the people of the State of New York to recognize and acknowledge those individuals and businesses within our midst who have made significant contributions to the quality of life therein; and WHEREAS, From time to time this Legislative Body takes note of certain extraordinary individuals and businesses it wishes to recognize for their valued contributions to the success and progress of society and publicly acknowledge their endeavors which have enhanced the basic humanity among us all; and WHEREAS, This Legislative Body is justly proud to commemorate the 50th Anniversary of the Koffee Kove; and WHEREAS, The Koffee Kove first opened on March 7, 1972, a date which happens to be owner Lori N.K. Durand's grandfather's birthday; and WHEREAS, Since that time, the local diner has become a staple of the Clayton community, known for its excellent food, service and atmosphere; and WHEREAS, Not only is the Koffee Kove an eatery beloved by its patrons, it is a place where many have found long, rewarding careers, including one server who has worked at the restaurant for 15 years and a woman who has worked in the diner's kitchen for roughly three decades; and WHEREAS, This also includes owner, Lori N.K. Durand, who purchased the restaurant from her parents, Roberta M. and M. John Keszler in 1991, but has been involved in the business since she was just 12 years-old; and WHEREAS, Throughout the years, the Koffee Kove has continued to serve its customers' favorites, everything from homemade soups to omelets, and regularly adds new items to meet the tastes of its hungry diners; and WHEREAS, The restaurant has also worked throughout the years to enhance its look, most recently closing in November to install new windows, flooring and complete other updates; and WHEREAS, In addition, the Koffee Kove benefited from a recent, major project in downtown Clayton where power lines were buried, sidewalks were rebuilt and new streetlights were installed; and WHEREAS, While the business is successful, the Koffee Kove, like so many other businesses, encountered challenges throughout the years, namely the COVID-19 pandemic, which began in 2020; and WHEREAS, In order to adapt and still serve customers, the restaurant added to-go orders and became the only restaurant in Clayton with a drive-through that could be utilized by its patrons; and WHEREAS, Throughout its 50 years of existence, the Koffee Kove has established itself as a cornerstone of the Clayton community, loved and enjoyed by residents and visitors to the area alike; and WHEREAS, The success of the Koffee Kove is in direct correlation to the efforts of its dedicated owner, customers and friends, whose involvement is, and always has been, characterized by an impressive commitment, an unbridled enthusiasm, and an uncompromising standard of excellence in all endeavors on behalf of the business and the community it serves; and WHEREAS, It is with great pleasure that this Legislative Body commends the Koffee Kove for its excellence and for its commitment and contributions to the community it has so ably served for the past 50 years; now, therefore, be it RESOLVED, That this Legislative Body pause in its deliberations to commemorate the 50th Anniversary of the Koffee Kove; and be it further RESOLVED, That a copy of this Resolution, suitably engrossed, be transmitted to Lori N. K. Durand, Owner, Koffee Kove.
