2 | WHEREAS, With the period of September 15 through October | ||||||
3 | 15 designated as Hispanic Heritage Month, the members of the | ||||||
4 | Illinois House of Representatives wish to congratulate Chef | ||||||
5 | Atzimba Perez on her distinguished career as a chef and as a | ||||||
6 | community advocate; and
| ||||||
7 | WHEREAS, Atzimba Perez is an entrepreneur, a founder, a | ||||||
8 | business owner, and a philanthropist with over 25 years of | ||||||
9 | experience in the culinary arts industry; and
| ||||||
10 | WHEREAS, Atzimba Perez studied hospitality and gastronomy | ||||||
11 | at Colegio Nacional de Educación Profesional Técnica in | ||||||
12 | Mexico; and
| ||||||
13 | WHEREAS, In Mexico, Atzimba Perez owned and operated a | ||||||
14 | successful catering business that she had to leave behind when | ||||||
15 | she moved to the United States in 1996; and
| ||||||
16 | WHEREAS, Once stateside, Atzimba Perez began working as a | ||||||
17 | server in many hotels and traditional institutions, including | ||||||
18 | the Union League Club; and
| ||||||
19 | WHEREAS, Through hard work and an inquisitive nature along | ||||||
20 | with the support of other chefs who valued her talent, Atzimba |

1 | Perez was able to establish and develop her current business | ||||||
2 | in the U.S., Atzimba Catering and Events; and
| ||||||
3 | WHEREAS, Through Atzimba Catering and Events, Atzimba | ||||||
4 | Perez has brought pre-Hispanic, traditional Mexican cuisine to | ||||||
5 | Chicago, offering a wide variety of dishes that showcase her | ||||||
6 | extensive knowledge of and passion for the culinary arts; and

7 | WHEREAS, During her culinary career, Atzimba Perez has had | ||||||
8 | the opportunity to cook for many notable individuals, | ||||||
9 | including U.S. Representative Chuy García and the Mexican | ||||||
10 | pop-rock band Maná; she has also participated in multiple | ||||||
11 | events, such as the Chicago Sueños Music Festival and Pilsen | ||||||
12 | Gourmet; and

13 | WHEREAS, Atzimba Perez has collaborated with numerous | ||||||
14 | chefs highly recognized in the culinary field; additionally, | ||||||
15 | she has given several interviews, and her work has been | ||||||
16 | featured on a number of shows and programs, including the | ||||||
17 | six-episode series No Passport Required broadcast on PBS WTTW | ||||||
18 | Chicago; and
| ||||||
19 | WHEREAS, Atzimba Perez is known for her philanthropic | ||||||
20 | spirit and has volunteered for the American Heart Association, | ||||||
21 | Latinos Unidos por la Salud, the American Liver Foundation, | ||||||
22 | and St. Jude Children's Research Hospital in Chicago; |
