A CONCURRENT RESOLUTION COMMENDING GULFPORT'S POPULAR EXECUTIVE CHEF ROB STINSON FOR HOSTING MISSISSIPPI PUBLIC BROADCASTING'S NEW "FIT TO EAT" SHOW.
WHEREAS, noted Gulfport Executive Chef Rob Stinson hosts Mississippi Public Broadcasting's new Fit to Eat show, airing Thursdays on Mississippi Public Broadcasting; and
WHEREAS, Rob Stinson knew he had hit a home cooking homerun with the new Fit to Eat when patrons watching his makeshift smoker on TV chorused, "That is so cool! I could do that." Such can-do ease, along with affordable, healthful, flavorful and local goals are the format for Mississippi Public Broadcasting's Fit to Eat. The popular program debuted in early April and airs at 7:00 p.m. on Thursdays. Cooking flavorful food is a hallmark of Stinson's Gulfport restaurants — Back Bay Seafood, Salute Italian, Lookout Steakhouse and Kilted Kelly's Sports Pub; and
WHEREAS, Stinson believes the health trend is here to stay. His culinary career includes 30 years in New Orleans and the past 10 on Mississippi's Gulf Coast. As a restaurateur, he's kept ahead of area trends — going nonsmoking before it was required and offering affordable gourmet fare before corporate chains went that direction. Brainstorming by producers came up with a checklist of Fit to Eat priorities: simple, easy-to-follow recipes; local, home-grown products; no expensive, out-of-the-ordinary kitchen equipment; and it had to be flavorful; and
WHEREAS, "The show's an extension of Mississippi Public Broadcasting's initiatives to improve Mississippians' health. Focusing on the best impact on the state's citizens was key," said Mississippi Public Broadcasting Director of Production Scott Colwell. Fit to Eat showcases local produce — from Vardaman sweet potatoes to wild-caught Gulf Coast shrimp. Sharing a healthier way to cook, without totally upending the flavor of treasured Southern classics, is the goal. People often assume healthier lifestyles call for drastic change. With Mississippi, where more than 2/3 of adults are overweight or obese, small changes can add up to a big impact; and
WHEREAS, Executive Chef Rob Stinson and restaurateur has made a huge impact on the Mississippi Gulf Coast in the past seven years. Lookout 49 was voted "Best Seafood Restaurant on the Gulf Coast 2006." Rob trained under Cordon Bleu Chef Gerald Thabuis, former Chef for President of France Charles DeGaulle, Master Italian Chef Ciro Cuomo, and Creole Chef extraordinaire Nathaniel Burton. He has three TV cooking segments weekly: "Lunch at the Lookout," and "Salute!" on WLOX-ABC TV and "That's What I Like About The South," on FOX TV WXXV; and
WHEREAS, Rob's spectrum of work has spanned from 5-Star dining at Windsor Court Hotel Grill Room to managing the highest volume restaurant in the world, Orlando Planet Hollywood; and
WHEREAS, Rob's community involvement has separated him from other businesses on the Gulf Coast as he serves as former President of the Long Beach Chamber of Commerce, current President of Long Beach Rotary, and sits on the board of many other committees; and
WHEREAS, Rob was born in Mount Vernon, New York, grew up in Shaker Heights, Ohio, and attended Miami University in Oxford, Ohio. Rob, his wife Paige, and children Samuel and Abigail, live in Long Beach, Mississippi; and it is with great pride that we join the Mississippi Gulf Coast in acknowledging the positive message and success of this Mississippi businessman and chef:
NOW, THEREFORE, BE IT RESOLVED BY THE SENATE OF THE STATE OF MISSISSIPPI, THE HOUSE OF REPRESENTATIVES CONCURRING THEREIN, That we do hereby commend Gulfport's popular Executive Chef Rob Stinson for hosting Mississippi Public Broadcasting's new "Fit to Eat" show which emphasizes Southern recipes with a healthy theme, and extend our best wishes for his future success.
BE IT FURTHER RESOLVED, That this resolution be presented to Rob Stinson, forwarded to Mississippi Public Broadcasting, and made available to the Capitol Press Corps.
