STATEMENT

This resolution recognizes October 25, 2014 as "New Jersey Paella Day."

Paella is a Spanish rice dish usually containing chicken, pork, shellfish, fish, eel, squid, beans, peas, artichokes, or peppers with generous amounts of saffron, a spice that turns the rice a wonderful golden color.  Paella originated in an area around Albufera, a fresh water lagoon near the city of Valencia on Spain's eastern coast.  At first, paella was a popular lunch choice among the Spanish working class, who would make the rice dish while in the fields using a flat pan over an open fire with whatever ingredients were readily available.  Today, paella is enjoyed all over the world in countless incarnations as cooks personalize the dish with their own unique combinations of ingredients and spices.

On October 25, 2014, Paella for the World, a private non-profit institution whose main objective is to disseminate authentic Spanish American culinary traditions, and the New Jersey Restaurant Association will hold the New Jersey Paella Festival at the Culinary Arts Institute of Hudson County Community College in Jersey City.  The event will feature workshops with famous chefs from Spain demonstrating how to prepare authentic paella, wine tastings, samplings of olive oil and other products related to paella and the Mediterranean diet, a spectacular flamenco show by artists from the Alborada Spanish Dance Theatre, and a paella cook-off.  In addition, Paella for the World will award scholarships to students of gastronomy and honor food journalists and chefs at the event.

This House recognizes October 25, 2014 as "New Jersey Paella Day" and urges public officials and citizens of this State to observe "New Jersey Paella Day" with appropriate activities and programs.
